Ingredients

  • 1kg unbleached bakers flour/ plain flour
  • 15g dry yeast
  • 570ml Luke warm water
  • 50g brown sugar
  • 20g salt
  • 20ml vegetable oil
  • 1cup Mixed dried fruit
  • 1/4cup walnuts
  • 1tsp mixed spice
  • 1/2tsp ground ginger
  • 30ml brandy

Instructions

  1. Chop the died fruits and nuts into small pieces, approximately the size of your fingernail, place in a small bowl
  2. In a separate bowl, combine the remaining ingredients and mix until a dough is formed.
  3. Add all the fruit and nuts to the dough and knead until well combined
  4. Wrap the dough and allow to prove for 30min
  5. Split the dough into 6-8 equal balls and knead back into smooth balls.
  6. Place balls onto a well dusted/ oiled bench/ baking paper and cover with a damp cloth to prove again
  7. Prepare smoker to 180C, use a neutral wood chip like cherry for this recipe
  8. Place bread dough into the smoker and bake for 10-20min. The bread will sound hollow when tapped
  9. Allow to cool slightly before serving, enjoy with softened butter and honey
