Ingredients
- 1kg unbleached bakers flour/ plain flour
- 15g dry yeast
- 570ml Luke warm water
- 50g brown sugar
- 20g salt
- 20ml vegetable oil
- 1cup Mixed dried fruit
- 1/4cup walnuts
- 1tsp mixed spice
- 1/2tsp ground ginger
- 30ml brandy
Instructions
- Chop the died fruits and nuts into small pieces, approximately the size of your fingernail, place in a small bowl
- In a separate bowl, combine the remaining ingredients and mix until a dough is formed.
- Add all the fruit and nuts to the dough and knead until well combined
- Wrap the dough and allow to prove for 30min
- Split the dough into 6-8 equal balls and knead back into smooth balls.
- Place balls onto a well dusted/ oiled bench/ baking paper and cover with a damp cloth to prove again
- Prepare smoker to 180C, use a neutral wood chip like cherry for this recipe
- Place bread dough into the smoker and bake for 10-20min. The bread will sound hollow when tapped
- Allow to cool slightly before serving, enjoy with softened butter and honey
