Ingredients
For The Cheeks
- 8 Beef cheeks denuded
- 2tbs Tomato powder
- 1tsp Garlic powder
- 1tsp Onion granules
- 1tbs Sweet paprika
- 1tsp Salt
- 1tsp Ground pepper
- ½tsp Ground cumin
- ¼tsp Ground clove
- 1tsp Sesame seeds
- 1tbs Chipotle in abodo (pureed)
- 2tbs Raw sugar
- 1½ cups Beef stock
For The Tortilla
- 2cups Plain flour
- 1 cup Boiling water
- 1tbs Veg oil
- Pinch salt
additional oil and flour will be required
(or you can buy your favorite shells!)
For The Salsa
- 4 Round tomatoes
- 3 Stalks spring onion
- 1 Clove garlic
- 1/2 Jalapeno
- 1tbs Fresh coriander (optional)
- 1tsp Fresh mint
- 1 Lime zest and juice
- 1tbs Veg oil
Instructions
For the cheeks
- Combine the spices, salt, and sugar in a bowl and mix until well incorporated
- Wearing gloves massage the chipotle into the beef cheeks and dust with the spice mix
- Prepare your smoker/ BBQ to 110-130֯C and place your cheeks on a high shelf or rack
- Smoke your beef cheeks for 2-3hrs uncovered, after the smoking period transplant your cheeks into a suitable dish or wrap in foil with stock and continue to cook for an additional 2-3hrs or until the cheeks have an internal temperature of 100֯C or probe easily
- Allow resting for 45min-1hr before slicing or pulling
For The Tortilla
- Combine the flour salt, oil, and boiling water in a bowl and stir with a spoon until well combined.
- Continue to stir until the mix has cooled enough to handle with your hands
- Dust a chopping board with flour, place the dough on top.
- Using a rolling pin roll the dough to approximately 2mm thick turning and dusting regularly with flour to avoid it sticking
- Using a 4” round cookie cutter punch out discs. The remaining dough can be kneaded back into a ball, rolled out, and cut **If you don’t have a cookie-cutter you can cut square tortillas using a knife
- Brush both sides of the tortilla with veg oil
- On a hot grill/ pan or flat top, grill the tortilla until golden on both sides. Cover with a paper towel and cling wrap to keep them from drying out
For The Salsa And To Serve
- Chop all ingredients finely and mix in a bowl with the lime and veg oil
if you wish to add other condiments with your tacos, mix and match as you like!
