Ingredients
The dumpling dough
- 450g plain flour
- 250L warm milk
- 10g dried yeast
- 60g sugar
- 60g butter
- 1 egg
- 1/4cup Chopped Dates
- 1/4cup walnut pieces
- 1tsp Ground Ginger
Caramel sauce
- 250ml boiling water
- 150g brown sugar
- 50g Honey
- 50g butter
- 1tsp corn flour
Instructions
The Dumpling Dough
- In a small pot scald the milk with the butter
- Add chopped dates and bicarb
- Remove from heat and allow to cool to just above room temp
- Once cooled combine all the ingredients into a medium sized bowl and mix well
- Cool in the fridge
- Once chilled, dampen your hands and roll teh rough into small balls
The Caramel sauce
- Combine half of the water with the butter, brown sugar, and honey in a pot and bring to the simmer
- Combine the remaining half of the water with the corn flour
- Slowly pour the corn flour mix into the pot and bring up to the simmer until the mix thickens
- Pour the mix into an appropriate cooking dish and add the dumplings
- Prepare the smoker to 160C
- Place the dish into the smoker and cook for 15-20min
- Allow to cool slightly before serving, enjoy with icecream or whipped cream
